A Pumpkin Seed Recipe Round Up & We Have a Winner

We enjoyed a nice long weekend and having the family together for a couple of nights was super special!  Someone at the gym wished me happy humpday this morning and I suddenly realized that it's Wednesday and I haven't posted on the blog this week AND we have a winner to announce.  So I'd better get to it!

The other night our teenager and his friend carved pumpkins.  I was secretly relieved because I had not planned to carve (or even purchase) a pumpkin.  Is that bad?  Anyway, he was thoughtful enough to save the seeds and I promised to make something yummy with them.  Here is a round up of some of the many recipes I've found using pumpkin seeds.  Do you have a favorite?

  1. My son has been asking me when we can carve the pumpkins specifically so he can bake the seeds! I'll have to show him your post and let him decide what to do with them this year! Thanks for this round up!

  2. Pumpkin seeds are one of the best way to get natural magnesium and they help fight off or prevent to a degree kidney stones.

  3. I LOVE pumpkin seeds and have always just baked them the traditional way but that spiced pumpkin seed brittle looks amazing. I'm going to try it!

  4. Yum to that pumpkin seed brittle! I did buy a pumpkin, but it's yet to be carved, and chances of my teenager doing it are probably slim! :)

  5. Oh my gosh, what a coincidence!! I JUST made the spicy pumpkin seeds in your second photo (from Martha's now defunct Everyday Food mag) last night to top the pureed butternut squash soup recipe I made. These pumpkin seeds are delicious and are my new favorite snack. I could eat a TON of them.

  10. I bet it was wonderful having your son home and for your birthday too! That pumpkin brittle looks yummy. I made pumpkin granola a week ago and it was delicious and quite healthy. My hubby has requested seconds already. We whipped through the first batch quickly.
