Three Yummy Summer Recipes

Lately, the boys are on a different schedule than Mr. & me.  During the school year, we make point to have family dinners most nights even if they are later than I would like.  We just need that time to connect during the hectic school year and dinner seems to be the best time to do it.  But during summer with everyone coming and going and teenagers committing to plans at the last possible minute, Mr. and I are often on our own for dinner.  I guess you could say every night is date night ;).  We either go out to one of our local favorite restaurants or opt to stay home and whip up something yummy together.  We love going to the grocery store or garden and gathering all the ingredients - then come home and pour a glass of wine or favorite IPA and start prepping the food. Fresh ingredients are always part of the mix.

These are a few recipes we have tried lately and enjoyed.  Have you tried them?

  2. They all look delicious! First one I am trying is that zucchini! Looks really yummy. My hubby and I love to shop and cook together as well. Great time to catch up on the day and we have a ball cooking.

  3. We've been eating a ton of zucchini lately. I posted Caprese Zucchini and Stuffed Zucchini on my blog Rindy Mae, both delicious. I just love summer food in general. Picking from the garden for dinner is the best feeling. Last night I oven roasted chard, zucchini, eggplant, and garlic and then dolloped some goat cheese on top when everyone was done. We had garlic and basil pasta and lemon and wine steamed clams to go with. Deeeeelicous dinner.

  4. I just saw a recipe for no-bake lasagna this evening and showed it to my husband, asking him if he thought it looked good. He said, "What's not to like?" I'll be making this soon!

  5. I am going to have to make the lasagna! I find it so hard to cook in the summer. Most nights of the week we opt for veggie sandwiches (my husband is vegetarian) and chips with guacomole.
